Fly to Denver and drive. Take the turnpike even though the tolls are costly. It’s much quicker from Denver to Boulder via the turnpike.

A bar called the Dark Horse is pretty good place to get a bite to eat and get a cold beverage. Plus its acouple blocks away from the football stadium.

Accomodations:
Hotel Boulderado - I'd say it is Boulder's Eldridge, pretty cool older hotel, room will be reasonable to higher rate
St. Julien - By far Boulder's nicest. If you've got a healthy budget, stay here but it'll cost you.
There are any number of hotels in the surrounding areas of Louisville, Westminster, etc...within 20 mins of Folsom/Pearl St.
Food:
Rio Grande - for Mexican food and incredibly good (potent) margaritas. Also a rooftop bar that provides an awesome view of the front range.
The Med - for anything from Mediterranean style pasta to wood-fired oven pizzas to steak, this place is phenomenal. Highly recommend.
Pasta Jay's - good Italian place on Pearl St.
Bar(s):
Anywhere on Pearl St., also a classic dive called 'The Sink' - a taller person will have to duck to get inside but it's a must to have a pre/postgame brew there.
Sights:
For the active outdoorsy type, great hiking at Chataqua(sp), just minutes away from campus.
For biking/hiking, Boulder canyon road is awesome. It's got an ice cold creek running down it and views are amazing. It's also a great drive, leads you up to the old hippie town of Nederland that's a pretty cool place.
Drive to Estes - you can easily drive to Estes Park, takes 45mins - 1hr. Definitely go by the Overlook Hotel, they've got some cool tributes to the movie 'The Shining' because some of the scenes were shot there i believe.
Have fun in Boulder, my 2nd favorite Big XII town after Larry, of course!

In Boulder, the Walnut Brewery is a must. www.walnutbrewery.com We went there before the KU b-ball game last February, and the only people not wearing Crimson & Blue were the servers and bartenders!
BMCMICH1- The hotel in Estes is actually the Stanley Hotel. It was called the Overlook Hotel in "The Shining" and yes, parts of "The Shining" were filmed there. They do a cool 'haunted tour' of the hotel. I agree, the RIO has the best Marg's north of Mexico!

good call foco, always get Stanley and Overlook mixed up (which one's real, which one's the movie).

The Walnut Brewery is KU headquarters for Basketball, I've been there 4 times. I'm sure this year many Colorado Jayhawk football fans will call it home as well. It's a very nice sports bar 1 block from Pearl Street and walkable to the football stadium. The only problem is that it gets very crowded with Jayhawks!!! Do not expect a table unless u get to the bar a couple of hours before the game. I'd say the place holds about 200, and 175 there are wearing crimson and blue!

As far as where to stay, I'd recommend NW Denver... aka Broomfield or Westminster. Less than a 30 min drive away and much more affordable hotels.

Good advice from PikesPeak--I stayed in Broomfield two years ago, and I will stay in Louisville when I travel to watch the Hawks beat C.U. in football this year. I would recommend using biddingfortravel.com prior to using Priceline.com You can save a lot of money on your hotel stay if you use these two sites.
